Le Marche is Italy's secret region. Some of the cleanest coastline of the Adriatic sea offers up an enormous range of crustacea, moluscs and fish. Further in land, the coastal plain, supporting olive groves and verdicchio vineyards, climbs up into the rugged Sibiline mountains where a wider selection of hardier grapes are grown, where shepherds are glimpsed in the distance, tending their sheep, creating the creamy-sharp pecorino cheese characteristic of this region. Contadini construct wooden fences to keep out the wild boar, another local specialty, as are other types of game such as venison, hare and wildfowl. Prosciutto, salame and ciauscolo mature in cellars next to last year's wine.
Le Marche is so unspoilt by tourists and other visitors that it has remained almost in a time warp. Every inhabitant has a piece of land where he grows his own vegetables, keeps chickens for their eggs, and, if there is room, grows grapes for wine and olives for oil. COOKING IN FLORENCE WITH MARIANGELA
SALTIMOBOCCA ALLA ROMANA
A quick meat recipe, savoury and appetizing!! For 4 people 8 thinly sliced veal cutlets Each meat slice should be approx. 4x4 inches. Put a slice of ham and a sage leaf on top of each veal slice and secure everything with a wooden toothpick, lightly dip in flour Melt the butter in a large frying pan and cook all veal slices very quickly on a high flame and both sides (the side with ham just for a few seconds)! Put the saltimbocca in a serving plate; Add 1/2 glass of wine and butter, and pour the sauce from the pan on your saltimbocca Salta in bocca means: it jumps in mouth Cooking
Tip of the Month:Cheese: In Italy it is a big no-no to put cheese on
seafood, even if it's a seafood pasta dish! And speaking of cheese, when cooking with
cheese, add any cheeses (or olive oil) at the very end of cooking after you have taken the pan off the heat
- if you don't, the cheese will break down into its components and get stringy. |
