Cooking Classes:
Fun and creative cooking lessons and lunches. Week mornings will be dedicated to cooking wonderful traditional lunches, using the most popular recipes from Cucina Romana and Toscana, with an eye for contemporary presentation: all very easy to replicate at home. We only use the most flavoursome seasonal organic ingredients sourced from local farmers. During lunch, there are more opportunities to sample the unique wines from central Italy.
Your accommodation will be in the Sabina region, where we have selected a small number of restored farmhouses and historic apartments with spectacular views of the surrounding countryside. Some have a swimming pool and all have beautiful gardens or piazzas outside their front door, and sunny double bedrooms with en-suite bathrooms. You will be staying in Farfa Sabina or Toffia, two picturesque and unspoilt hilltop medieval villages. The cooking lessons are in Toffia, one of the best preserved medieval hilltop villages in the Sabina region.

ITINERARY
SIX NIGHT PROGRAM
Day One (Saturday)
Arrive Evening: Welcome dinner.
This is a relaxed and informal dinner during which you can discover the unique flavours of traditional food from Sabina, as well as sample some of the best local wines.
During dinner, your hostess Sally will give you a brief outline of your holiday.

Day Two ( Sunday)
Cooking lesson # 1 + lunch. In the morning, our expert Signora Lina will start our cooking lesson with making fresh pasta. We will also discuss pasta sauces in general and the importance of fresh ingredients and herbs, their combinations and balance. All our ingredients are grown locally and only what's in season.
Afternoon: Guided tour of an olive grove with Linnea and Valerio, followed by olive oil sampling with bruschetta and a glass of wine while overlooking majestic views of Sabina.
Evening: Dinner will be taken at our local Trattoria (with traditional 'cucina della casa' home cooked food) in the medieval village of Toffia

Day Three (Monday)
Morning: Cooking lesson # 2 + lunch, you will discover some more Italian secrets about regional dishes while preparing a three course meal using only what's in season.
Afternoon: (Optional) informal guided tour to visit the largest olive tree in Europe followed by a stroll around the nearby medieval hilltop village of 'Fara in Sabina' OR you are free to relax.
Evening: Dinner will be enjoyed at a local 'ristorante' in the monastic village of Farfa. Spectacular by night!

Day Four (Tuesday)
Daytime: We are off to Rome for a guided tour of the Eternal City. It will be a pleasant walk through Rome’s alleyways to discover famous monuments and hidden treasures. We will stop for lunch at a typical Roman trattoria, where the locals (not the tourists) go.
Evening: Wine tasting evening and light dinner with food & wine editor Guido Santi. This is an informal evening during which you’ll learn about different Italian wines, the importance of their region of production and the fact that hundreds of native grapes are grown on the Italian peninsula.

Day Five (Wednesday)
Morning: Cooking lesson # 3 + lunch, more Italian cooking tips and secrets are revealed as Guido guides you through your third cooking lesson using seasonal ingredients, for 'primo', 'secondo' and 'dolce' (your three course meal).
Afternoon: An informal tour around the streets of the monastic village of Farfa ('L'Abbazia di Farfa') with its amazing 15th c. frescoed church, and numerous art and craft shops including locally hand woven cloths OR free time.
Evening: Dinner will be taken at our local Trattoria (with 'cucina della casa' home cooked food) in the medieval village of Toffia.

Day Six (Thursday)
Free day to do as you please OR (optional) a visit to the local markets and wood-fired oven bakery plus a leisurely tour around another magical medieval hilltop village.
Evening: Farewell dinner will be held at another of our favourite restaurants, in a nearby medieval hilltop town. Enjoy the magnificent view as you watch the sunset over the valley.

Day Seven Friday)
Depart after breakfast with hopes that you will return for a future visit!


THREE NIGHT PROGRAM
Day One (Friday)

CANCELLATION POLICY
Cancellations made by participants must be made in writing (via email or post), signed and sent to operator (please inquire) and becomes effective upon receipt by operator. If you cancel after your booking has been confirmed, you must pay a charge to compensate us for the expense and loss which we incurred as a result of this cancellation. Charges you will incur will be as follows:
Less than 56 days prior to start of the holiday loss of 50% deposit payment
Less than 42 days prior to start of the holiday loss of deposit
Less than 35 days prior to start of the holiday 50% of total cost
Less than 20 days prior to start of the holiday 70% of total cost
Less than 11 days prior to start of the holiday 100% of total cost
You may be able to claim under your Travel Insurance policy if this cancellation falls within the conditions of that policy. In the event of cancellation by operator in foreseen, or unforeseen circumstances an alternative may be offered; if this is unsuitable to you, we will return all monies that you have paid.
