Florence, Italy - Day Cooking Classes
Available year round
This is an opportunity of a lifetime! Step into a private Florentine home located in a quiet upscale residential area and enjoy a unique culinary experience. Enjoy a market visit and cooking class with a woman who has lived in Italy for over three decades, and who is an author of several books on Tuscany and is an expert on the area. She will not only share simple and delicious Tuscan recipes but will also talk with you about what everyday life is like in this enchanting part of Italy.
This exclusive culinary workshop is held in the Italian kitchen of a private Florentine home located just minutes from the historical center. Participants will meet with the instructor at 10:30 a.m. and stroll over to a quaint outdoor market in the Cure district of Florence. There you will hand pick produce for the day’s menu. The market visit lasts about 45 minutes.
Then it’s off to the local wine shop to choose wine(s) to pair with the selected menu. After a quick stop at the baker for freshly baked bread it’s off to the kitchen for your hands on cooking lesson, lasting about 2 1/2 hours. Students will prepare a four course lunch, making one antipasto, a homemade pasta (ravioli, tagliatelle or gnocchi) with a seasonal sauce, an entrée (chicken, beef, pork or vegetable) and side dish. A dessert may or may not be included in the hands-on portion of the course depending on the menu selected, but a dessert will be served at meal’s end and the instructor will supply students with the recipe. *If you would like to invite one guest for lunch, please inquire. Your guest should arrive at 1:30pm for the meal.
Afterwards, guests will be ready to set off for their day in Florence around 3 p.m., choosing to visit museums, shop, or just explore this fascinating city.
Below is a sample menu. Keep in mind Tuscan food is simple. It is not elaborate or time consuming to prepare. It is the exquisitely fresh with seasonal ingredients that make this so called ‘peasant’ fare one of the world’s most sought after cuisines.
SAMPLE SPRING AND SUMMER LUNCH MENU
Antipasto: Creamy artichoke canapés; stuffed, fried zucchini blossoms OR Panzanella – typical Tuscan summer bread salad made with garden fresh vegetables and dressed in a rich herbal vinaigrette
First Course: Homemade pasta (tagliatelle, ravioli OR gnocchi) dressed in a seasonal sauce.
Entrée: Chicken, Pork, Beef or Vegetable & a seasonal side or garden fresh salad.*
Dessert: Biscotti di Prato (Almond cookies) and sweet wine OR a seasonal dessert.
**Wine, bread and coffee are included in the meal. All wines are from local vineyards.
If you prefer a luncheon experience without a cooking class, to just sit back and enjoy good homecooked food over stimulating conversation as you learn about what living in this enchanting Renaissance city is through the eyes of a local, please inquire. Lunch is served at 1pm. Allow at least two hours for this luncheon experience. Minimum 2/3 persons.
*Special dishes may be requested.
*Fall and Winter Menus are structured much like the above. Since Tuscan cooking is seasonal, the hostess will select the freshest produce and meats the season has to offer. Dishes like: Polenta smothered in a wild boar sauce are included in winter menu choices while Porcini mushroom risotto may take the limelight in an autumn menu. Ribollita (Tuscan bean and cabbage soup) is a first course choice in winter, when black cabbage is in full bloom, while homemade spinach & ricotta ravioli dressed in a traditional Bolognese sauce is a hearty first course in autumn. Special entrée requests are always welcome.

Sarah A., Vancouver, Canada"We had the most wonderful time and this was the highlight of our 3 weeks in Italy. Our experience with Active Gourmet Holidays was incredible. The service we received from the moment we considered booking through to after we returned home was nothing short of spectacular."
