Whether you are an experienced cook or just passionate about good Italian food, learn to cook authentic Italian dishes in a fun and friendly atmosphere with Chefs Tiziana and Zoila. They offer hands-on cooking courses in English that range from one-day classes to longer courses. Chef Zoila is bilingual having lived and worked in the United States for many years. A love for good food and cooking, and the desire to encourage people to visit and appreciate the beauties of Umbria is what led to the creation of Zoila's and Tiziana's cooking lessons. They both come from a long tradition of hospitality in the travel industry as well as in the restaurant field.

 

Only steps away from Tuscany, Umbria rivals its neighbour for its uncontaminated natural beauty and offers one of Italy's most authentic and healthiest cuisines. Classes are held at an elegant antique Villa, dating back to the early 1800s located in Deruta, a medieval town known world-wide for its finest ceramics, just a few kilometres away from Perugia, Assisi, Todi. 

 

If you are renting a property in Umbria, Zoila and Taziana also offer classes on location and will come to your rental villa. They also offer catering if you are interested in entertaining at your villa.

 

Participants of the cooking classes will take back home with them the secrets of Italy's traditional home cooking while enriching their visit with a deeper appreciation of the Italian culture.

 

Classes feature only fresh products, directly from the Villa's garden or from the local markets. Besides a generous vegetable garden from which they pick the freshest produce such as zucchini, tomatoes, carrots and many others, they also grow a myriad of herbs. Fresh mint, basil, rosemary, marjoram, and thyme grow alongside- other less well-known herbs These unique herbs blend together to create mouth-watering aromas from our dishes.

 

You can also partake in wine tasting with a professional Sommelier AIS, olive oil tasting at the villa, a visit to a local olive oil mill and tasting of the freshly pressed olive oil, a visit to a local produce market or a guided visit to one of Deruta’s famous pottery factories. CLASS ITINERARY

 

Classes begin at 10:00AM and end at 2:00PM, and include lunch. Dinner classes are available upon request.

 

When the students arrive at the villa they are greeted by the chefs and escorted to the vegetable and herb garden to pick the freshest ingredients that will be used for the class. Upon their return to the kitchen, they will begin working on the menu. Classes last approximately 2 to 2 and a half hours. When the menu is complete, the guests will enjoy what they have prepared. To enhance the experience of the sense, the meal will be served on a colourful and artistic table setting all arranged with beautiful Deruta ceramics. Before departure the students will be handed a print-out of all the recipes explored during the class.

 

 

 

SAMPLE MENU

 

Appetizers: three types of bruschetta, topped with different sauces or "torta al testo," a local, Umbrian flat bread usually served with cold cuts (prosciutto, salame, and other regional cured meats etc.) or vegetables.

 

First courses: two first courses consisting of pasta, risotto, or gnocchi accompanied by flavourful and rich sauces, which will be more or less spicy, depending on the seasonal ingredients used.

 

Second courses: tasty involtini

 

Dessert: roccetti al vino

GROUP SIZE

 

A minimum of 2 participants is required to run this tour and the tour is limited to a maximum of 12 participants. 
A minimum of 5 participants is required to run classes at the clients' villa.
